Participants in the Milk Quality and Products Career Development Event (CDE) demonstrate their knowledge about the quality production, processing, distribution, promotion and marketing of milk and dairy foods.
How do you judge dairy products?
You will use sight, smell, taste, and touch in judging dairy products. The extent to which you use each sense depends upon the product being judged. In general, beginners should place most emphasis on smell and taste. The sense of smell is important in determining flavor.

Metal-induced oxidized samples may be prepared by preparing 100 ml of 1 percent CuSO4. 5H2O as a “stock copper solution” and keep refrigerated. Add 0.5 to 1 ml of the “stock copper solution” to a quart of pasteurized/homogenized milk.
