ANSWER
It depends on which class. What most professors want to know is if you understand the material and the ideas in the classes. Using quotes gives more authority to your answer and if the professor quoted such person or book, that quote is almost a requirement. So, it is a mix of both. With essay questions about a reading, I had trick. I used to read the first 3 paragraph, then the last 3 paragraph. (of course, assuming is just a few pages long reading material), then I would read a few random pages or paragraph inside the content, arrive a little bit early and discuss with my fellow students the reading. Chances are that they read the whole thing and would confirm what the reading was all about. A lot of people in academia tend to be redundant when they write, so there i a very big chance that you will read page after page of the same thing. This is specially true in Art and Art History, where most authors (or at least all that I were assigned as an Art minor) don’t know how to write and think being redundant is an effective way to convince you that they know what they are talking about. As you may imagine, it doesn’t always work.

TL:DR Just write what you think the professor wants to read.
