  1. Scoop the confit de canard pieces out of the tin (see comments posted below if you want to try and make your own)
  2. Put them on a baking tray in a medium oven for 15 minutes.
  3. That’s it, ready.
  4. Serve with salad, dauphinoise potatoes, plenty of fresh bread, and a nice glass of Bordeaux.

Empty the contents of the tin into a large saucepan and gently heat through for 20 minutes, stirring occasionally. You can also heat up in a covered casserole dish in the oven for around 30 minutes. Serve with a simple green salad or green beans cooked and tossed in butter.

Once you’re ready, here’s what to do:

  1. Preheat the oven to 400 degrees.
  2. Place the duck skin-side down in a pan.
  3. Roast for 30 to 40 minutes, turning the duck halfway through.
  4. When cooked, the skin should be golden brown and the meat should be warmed through.
  5. Leave for a few minutes to cool and settle before serving.

When the cassoulet was bubbling, I poured it into a shallow baking dish, and covered it with fresh breadcrumbs (3/4 cup to be exact) and a small handful of chopped parsley, salt and pepper, and a drizzle of olive oil.

What goes with confit de canard?

If you thought Duck Confit on its own would already exceed your week’s intake of calories, the dish is traditionally served with pommes de terre à la Sarladaise, which are slices of potatoes cooked in duck fat (thick coin-sized French fries). If you are going to indulge, you may as well do it properly.

How do you reheat canned cassoulet?

Cassoulet can be made 3 days ahead and cooled completely, uncovered, then chilled, covered. Reheat, covered, in a preheated 350°F oven 30 minutes. If beans have soaked up the liquid, add some of reserved broth before reheating.

What does confit de canard mean in English?

Duck confit
Duck confit (French: confit de canard [kɔ̃.fi d(ə) ka. naʁ]) is a French dish made with whole duck. In Gascony, according to the families perpetuating the tradition of duck confit, all the pieces of duck are used to produce the meal.

Why do duck legs take so long to cook?

Duck legs are traditionally ‘confit’, this means they are salted overnight and then submerged in duck fat and cooked slowly so they are preserved by the fat. Because the cooking method is low and slow the meat remains succulent and doesn’t dry out, and the fat isn’t absorbed so the meat isn’t fatty.
